Ingredients

Zhug Marinade

  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 hot chile pepper, such as Thai or Serrano, stemmed and seeded
  • 2 garlic cloves, peeled
  • 2 cups cilantro leaves
  • 2 cups parsley leaves
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
  • ½ cup olive oil

Halloumi

  • 16 ounces halloumi, cut into even slices

Tzatziki

  • ½ cup grated cucumber, well drained
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons olive oil
  • 1 teaspoon minced garlic
  • ¼ teaspoon salt
  • 1 tablespoon chopped dill

Tomato Salad

  • 1 cup halved cherry tomatoes
  • 1 cup sliced red onion
  • ¼ cup chopped parsley
  • 3 tablespoons olive oil
  • ¼ teaspoon salt

Assembly

  • 4 pitas, warmed and halved

Instructions

  1. Toast Spices: Place a small skillet over medium heat. Add the coriander and cumin seeds and toast until fragrant, about 30 seconds to 1 minute. This releases their essential oils and deepens the flavor.
  2. Make Zhug Sauce: Transfer the toasted coriander and cumin to a food processor. Add the chile pepper, garlic cloves, cilantro, parsley, lemon juice, lemon zest, salt, and pepper. Pulse until very finely chopped, then slowly stream in olive oil while pulsing until fully combined into a vibrant, pesto-like sauce.
  3. Marinate Halloumi: Place the sliced halloumi in a large bowl or resealable bag and cover with the zhug sauce, ensuring each piece is well coated. Refrigerate and marinate for 2 to 6 hours to infuse the flavors.
  4. Prepare Tzatziki: Squeeze out all moisture from the grated cucumber using paper towels. In a bowl, combine the drained cucumber with Greek yogurt, lemon juice, olive oil, minced garlic, salt, and chopped dill. Stir well and set aside to allow flavors to meld.
  5. Make Tomato Salad: In another bowl, combine halved cherry tomatoes, sliced red onion, chopped parsley, olive oil, and a pinch of salt. Toss gently and set aside.
  6. Preheat Grill: Heat the grill to medium-high heat, targeting a temperature between 400-450°F (204-232°C).
  7. Grill Halloumi: Place the marinated halloumi over direct heat and grill for 2-3 minutes per side, until golden brown and grill marks appear. The cheese should lift easily from the grates without sticking.
  8. Assemble Pitas: Carefully open each warmed pita. Add tomato salad about halfway inside, then layer with grilled halloumi slices. Drizzle generously with tzatziki sauce, then fold and serve immediately.

Notes

  • To get the best texture, ensure halloumi slices are evenly cut about ¼ inch thick for even grilling.
  • Marinating the halloumi for the full 6 hours will deepen the flavor, but 2 hours works well if short on time.
  • Removing excess moisture from grated cucumber is key to a creamy but not watery tzatziki.
  • Serve these pitas fresh off the grill to enjoy the contrast of warm cheese and cool tzatziki.
  • For a milder version, reduce or omit the chile pepper in the zhug marinade.
