This quick and flavorful Grilled Scallops recipe brings out the natural sweetness of large sea scallops enhanced by a zesty marinade of olive oil, lemon juice, garlic, and Italian seasoning. Ready in just 30 minutes, it's perfect for a light and elegant seafood dinner.

Ingredients

Scallops and Marinade

  • 1 1/4 pounds large sea scallops
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 teaspoons minced garlic

Garnish

  • 1 tablespoon chopped parsley
  • Lemon wedges for serving

Instructions

  1. Prepare the Marinade: In a large bowl or resealable plastic bag, combine olive oil, lemon juice, kosher salt, black pepper, Italian seasoning, and minced garlic. Stir well to blend all the ingredients thoroughly.
  2. Marinate the Scallops: Add the scallops to the marinade, tossing to coat them evenly. Seal the bag or cover the bowl, then refrigerate for at least 15 minutes and up to 2 hours to infuse flavor without cooking the scallops.
  3. Thread Scallops on Skewers (Optional): For easier grilling, thread scallops onto skewers. If scallops are very large or preferred, you may grill them directly without skewers.
  4. Preheat the Grill: Heat an outdoor grill or indoor grill pan over medium-high heat until hot and ready for cooking.
  5. Grill the Scallops: Place the scallops or skewers onto the grill and cook for 1 to 2 minutes per side until the scallops are firm, opaque, and lightly charred, indicating they are perfectly cooked.
  6. Garnish and Serve: Remove scallops from the grill, sprinkle with chopped parsley, and serve immediately with lemon wedges for an added burst of freshness.

Notes

  • Do not marinate scallops for longer than 2 hours to avoid them being 'cooked' by the acid in lemon juice.
  • Using skewers helps manage the scallops on the grill, but it’s optional depending on scallop size.
  • Ensure grill or grill pan is preheated to achieve a good sear without overcooking.
  • Serve immediately for best texture and flavor.
  • Can be paired with a light salad or steamed vegetables for a complete meal.
