This grilled cauliflower recipe offers tender and perfectly browned florets with a smoky char, enhanced by a flavorful blend of olive oil, garlic powder, paprika, lemon juice, and seasonings. A quick and healthy side dish cooked on the grill for a delightful texture and taste.

Ingredients

Cauliflower

  • 1 head cauliflower, cut into medium or large florets

Seasoning & Marinade

  • 1/4 cup water
  • 1/4 cup olive oil
  • 1 tsp lemon juice (optional)
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Prepare Cauliflower: Place the cauliflower florets in a large bowl with water. Cover tightly with plastic wrap, ensuring the plastic doesn't touch the cauliflower, and microwave for 4-5 minutes until tender. Alternatively, steam the florets on the stovetop using a steamer.
  2. Drain and Season: Drain the cauliflower and pat dry thoroughly. Return to the bowl, drizzle with olive oil and lemon juice, then season with garlic powder, paprika, sea salt, and black pepper. Toss well to coat evenly and let sit for 10-15 minutes to absorb flavors.
  3. Preheat Grill: Preheat your grill over medium heat for 10 minutes, or if using a grill pan, heat it on the stovetop for 5 minutes to get it hot and ready.
  4. Grill Cauliflower: Place the seasoned cauliflower directly on the grill. Cook for 2-3 minutes on each side, grilling over direct heat until the florets develop a nice char and are browned on all sides but still tender inside.

Notes

  • Microwaving or steaming the cauliflower first ensures it becomes tender before grilling.
  • Letting the cauliflower marinate in the olive oil and spices enhances its flavor.
  • Monitor the cauliflower while grilling to prevent burning and achieve perfect browning.
  • Lemon juice is optional but adds a subtle brightness to the flavor.
  • Use tongs to turn the florets carefully when grilling to maintain their shape.
  • This recipe pairs well with grilled meats, fish, or as a standalone vegetarian dish.
