This salad is easy to prepare in under 30 minutes and serves as a wholesome, refreshing meal or side dish.

Ingredients

Salad

  • 1 medium bunch of curly green kale (about 8 ounces)
  • Fine salt, to taste
  • 1 can (15 ounces) chickpeas, rinsed and drained or 1 ½ cups cooked chickpeas
  • ½ cup thinly sliced Kalamata olives and/or roughly chopped pepper rings
  • ⅓ cup oil-packed sun-dried tomatoes, rinsed and drained
  • ⅓ cup finely grated Parmesan cheese (optional)
  • ⅓ cup raw sunflower seeds
  • ¼ teaspoon extra-virgin olive oil (for toasting seeds)

Dressing

  • ¼ cup tahini
  • 3 tablespoons lemon juice (from 1 to 1 ½ lemons)
  • 1 tablespoon extra-virgin olive oil
  • 1 medium clove garlic, pressed or minced
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon fine salt
  • 2 tablespoons water
  • Freshly ground black pepper, to taste

Instructions

  1. Massage the Kale: Place the chopped kale in a large serving bowl. Sprinkle lightly with fine salt and massage using your hands, scrunching up large handfuls at a time until the kale darkens and releases a fragrant aroma, making it tender and flavorful.
  2. Add Salad Ingredients: To the massaged kale, add the rinsed chickpeas, sliced Kalamata olives and/or chopped pepper rings, drained sun-dried tomatoes, and Parmesan cheese if using. Set the bowl aside.
  3. Toast Sunflower Seeds: In a small skillet over medium heat, combine the raw sunflower seeds with ¼ teaspoon extra-virgin olive oil and a few dashes of salt. Stir frequently and cook until the seeds become fragrant and lightly golden at the edges, roughly 5 minutes. Transfer the toasted seeds into the salad bowl.
  4. Prepare the Tahini Dressing: In a small bowl or liquid measuring cup, whisk together tahini, 1 tablespoon olive oil, lemon juice, pressed garlic, Dijon mustard, and salt until smooth. Add the water gradually while whisking to achieve a creamy consistency. Season with freshly ground black pepper to taste.
  5. Toss and Serve: Pour the dressing over the salad, using as much as desired to evenly coat all ingredients. Toss gently and serve immediately for best freshness. The salad can be refrigerated, covered, for up to 3 days.

Notes

  • Massaging kale softens its tough texture and reduces bitterness, making it more palatable.
  • Sunflower seeds can be toasted in a dry skillet if preferred, but adding a small amount of olive oil enhances flavor and browning.
  • Parmesan cheese is optional and can be omitted to keep the salad vegetarian or to adjust flavor.
  • The dressing thickness can be adjusted by adding more or less water according to preference.
  • This salad keeps well refrigerated for up to 3 days but is best enjoyed fresh.
