This Garlic Parmesan Pasta is a creamy, flavorful one-pot meal cooked in just 20 minutes. Using angel hair pasta simmered in chicken broth and milk, combined with garlic, butter, and Parmesan cheese, it creates a rich sauce that clings to the delicate noodles perfectly. Garnished with fresh parsley, this dish is a quick, satisfying comfort food option that's ideal for busy weeknights.

Ingredients

Main Ingredients

  • ½ cup Parmesan cheese (finely grated)
  • 3 tablespoons butter (divided)
  • 4 cloves fresh garlic (minced)
  • 2 cups chicken broth
  • 1 cup milk
  • 8 oz. angel hair pasta
  • Fresh parsley (to garnish)

Instructions

  1. Prep Parmesan Cheese: Grate the Parmesan cheese finely and leave it at room temperature to help it incorporate smoothly into the sauce later.
  2. Melt Butter and Sauté Garlic: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and cook for 1 to 2 minutes, stirring occasionally, until fragrant but not browned.
  3. Add Liquids: Pour in 2 cups of chicken broth followed by 1 cup of milk, stirring as you add the milk. Bring the mixture to a boil.
  4. Add Pasta and Cook: Add the angel hair pasta to the boiling mixture. Use kitchen tongs to gently twist and submerge the noodles as they soften. Cook for 4 to 5 minutes, stirring occasionally to prevent sticking. Reduce the heat to low once pasta begins to soften.
  5. Finish with Butter and Parmesan: Stir in the remaining 1 tablespoon of butter. Gradually add the Parmesan cheese, stirring continuously until the sauce becomes smooth and creamy. The sauce will initially be thin but will thicken as it rests and the pasta absorbs the flavor.
  6. Garnish and Serve: Sprinkle chopped fresh parsley over the pasta and serve immediately, optionally with garlic bread with cheese for a complete meal.

Notes

  • Angel hair pasta cooks quickly; watch closely to avoid overcooking, which can make noodles clumpy.
  • Temper the Parmesan cheese by allowing it to come to room temperature for a smoother sauce.
  • Stirring occasionally during pasta cooking prevents sticking and uneven cooking.
  • The sauce thickens as it stands, so don’t worry if it seems thin at first.
  • For a vegetarian option, substitute chicken broth with vegetable broth.
