These Garlic Herb Roasted Potatoes are a crispy and flavorful side dish perfect for any meal. Tossed with olive oil, fresh garlic, and herbs, then roasted to golden perfection, they deliver a delicious blend of savory and aromatic notes that complement a variety of main courses.

Ingredients

Potatoes

  • 3 pounds small white or red potatoes

Seasoning & Herbs

  • 3 tablespoons olive oil
  • 2 tablespoons minced garlic (about 6 to 7 cloves)
  • 2 tablespoons fresh parsley (or other herbs)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Prep the potatoes: Slice the small white or red potatoes in half or quarters, depending on their size, to ensure even cooking and crispy edges.
  2. Preheat oven and mix: Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the cut potatoes with olive oil, minced garlic, fresh parsley, salt, and black pepper.
  3. Toss ingredients: Toss the potatoes thoroughly to make sure all pieces are evenly coated with the oil and seasoning mixture, allowing the flavors to penetrate the potatoes.
  4. Prepare for roasting: Spread the potatoes in a single, even layer on a sheet pan, placing the cut side down to maximize crispiness.
  5. Roast potatoes: Roast in the preheated oven for 45 to 55 minutes, stirring halfway through to promote even browning, until the potatoes are golden brown and crispy on the outside and tender inside.
  6. Serve and garnish: Transfer the roasted potatoes to a serving bowl and, if desired, sprinkle with extra fresh parsley for a burst of color and fresh herb aroma before serving.

Notes

  • For extra crispiness, ensure potatoes are spread in a single layer without overcrowding the pan.
  • You can substitute parsley with other fresh herbs like rosemary, thyme, or oregano for a different flavor profile.
  • Use red or white potatoes as preferred; red potatoes hold shape better while white potatoes tend to be softer inside.
  • Leftover roasted potatoes can be refrigerated and reheated in the oven to retain crispiness.
