These Garlic Grilled Shrimp Skewers are a flavorful and easy-to-make seafood dish perfect for a quick weeknight dinner or a summer barbecue. Marinated in a zesty blend of garlic, fresh herbs, and lemon juice, the shrimp are grilled to juicy perfection and served with a delicious garlic herb marinade drizzle.

Ingredients

Shrimp and Marinade

  • 1 pound large shrimp, peeled and deveined
  • ¼ cup olive oil
  • ¼ cup fresh cilantro, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch cayenne pepper (adjust to spice preference)
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes before grilling)

Instructions

  1. Make Marinade: In a small mixing bowl, whisk together olive oil, lemon juice, chopped cilantro, chopped parsley, minced garlic, salt, black pepper, and cayenne pepper until well combined.
  2. Marinate the Shrimp: Place the peeled and deveined shrimp in a large bowl. Pour about three-quarters of the marinade over the shrimp and gently toss until all shrimp are evenly coated. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour to allow flavors to meld.
  3. Thread Shrimp: Remove shrimp from the marinade, reserving the leftover marinade for serving. Thread the shrimp onto skewers, making sure to also add bits of the garlic and herb marinade onto the shrimp for maximum flavor.
  4. Preheat Grill: Heat a grill or grill pan over medium-high heat until hot and ready for cooking.
  5. Grill Shrimp: Place shrimp skewers on the hot grill. Cook for 2 to 3 minutes on each side until the shrimp turn pink and opaque, indicating they are perfectly cooked.
  6. Serve: Remove the shrimp skewers from the grill and place on a serving plate. Spoon the reserved marinade over the cooked shrimp for an extra burst of flavor and serve immediately.

Notes

  • To prevent skewers from burning, soak wooden skewers in water for at least 30 minutes before grilling.
  • Do not overcook the shrimp to maintain their tenderness and avoid rubbery texture.
  • Adjust cayenne pepper to your preferred spice level or omit for a milder taste.
  • This recipe can be easily doubled for larger gatherings.
  • Serve with rice, salad, or grilled vegetables for a balanced meal.
