This Garlic Butter Steak Bites recipe features tender, juicy steak cubes seared to perfection and tossed in a fragrant garlic butter sauce. Perfect as a quick and flavorful appetizer or main dish, these steak bites are easy to prepare and deliver rich, buttery goodness with a hint of fresh parsley.

Ingredients

Steak

  • 2 pounds steak, cut into bite-sized cubes
  • Salt and ground black pepper, to taste (season generously)
  • 1 tablespoon oil (vegetable or canola oil recommended)

Garlic Butter Sauce

  • 4 tablespoons butter
  • 2 cloves garlic, minced (or more to taste)
  • 2 tablespoons chopped parsley (optional, for serving)

Instructions

  1. Prep steak: Remove the steak from the fridge 30 minutes before cooking to let it come to room temperature. Unwrap and cut into bite-sized cubes, then generously season all sides with salt and black pepper. Let the seasoned steak sit uncovered on a plate at room temperature for 30 minutes to enhance flavor and even cooking.
  2. Sear steak: Heat a large skillet, preferably cast iron, over high heat until very hot. Add 1 tablespoon of oil. Place the steak cubes in the skillet in a single layer without overcrowding; cook for about 2 minutes per side until a well-browned crust forms while the interior remains tender. Work in batches if necessary to avoid steaming. Once seared, transfer the steak bites to a plate and tent loosely with foil to keep warm.
  3. Make garlic butter: Lower the stove heat to medium and add 4 tablespoons of butter and the minced garlic to the empty skillet. Cook for about 2 minutes, stirring occasionally until the garlic becomes fragrant and the butter is melted but not browned. Remove from heat promptly to avoid burning the garlic.
  4. Finish: Return the seared steak bites to the skillet with the garlic butter. Toss gently to coat the steak evenly in the garlic butter sauce. Garnish with chopped parsley if desired, and serve immediately for the best taste and texture.

Notes

  • For the best results, use a high-quality steak such as sirloin, ribeye, or New York strip.
  • Cut steak pieces into roughly 1 to 1.5 inch cubes to ensure even cooking and juicy bites.
  • Do not overcrowd the skillet when searing to maintain a proper crust; cook in batches if necessary.
  • Letting the steak rest after seasoning and before cooking helps the meat cook more evenly and enhances flavor.
  • Use a heavy-bottomed skillet like cast iron for optimal searing.
  • Adjust garlic quantity based on personal taste preference.
  • Serve with fresh parsley to add a bright, fresh contrast to the rich butter and steak.
