Perfect as a refreshing dip with multigrain tortilla chips or a flavorful topping for salmon, fish tacos, or shrimp, this salsa is easy to prepare and full of bright, tropical flavors.

Ingredients

Fresh Mango Salsa Ingredients

  • 1 large firm avocado, cut into chunks (just very slightly ripe)
  • 1 ½ heaping cups diced mango (from 2 large ripe mangoes)
  • 1 red bell pepper, finely diced
  • ¼ cup finely diced red onion
  • 1 jalapeño, seeded and minced
  • ¼ cup fresh chopped cilantro
  • Zest and juice of 1 small lime
  • Salt and pepper to taste

Instructions

  1. Prepare Ingredients: Carefully dice the firm avocado into chunks, finely dice the red bell pepper and red onion, seed and mince the jalapeño, and chop the fresh cilantro. Dice the ripe mangoes to yield about 1 ½ cups.
  2. Combine Ingredients: In a medium-sized bowl, add the diced avocado, mango, red bell pepper, red onion, jalapeño, and chopped cilantro. Add the lime zest and juice to the bowl.
  3. Season and Mix: Sprinkle salt and pepper to taste. Gently mix all ingredients together until well combined, ensuring the avocado remains chunky and intact.
  4. Serve: Garnish the salsa with extra chopped cilantro if desired. Serve immediately with multigrain tortilla chips. This salsa is also delicious as a topping for salmon, fish tacos, or shrimp.

Notes

  • Use firm avocado to prevent it from getting too mushy in the salsa.
  • Adjust jalapeño quantity for desired spice level.
  • For a sweeter salsa, use fully ripe mangoes, but keep in mind avocado texture.
  • Serve fresh to enjoy optimal flavor and texture; salsa can be stored covered in the refrigerator for up to one day.
  • Doubling the recipe will serve 10-12 people.
