A refreshing and vibrant Middle Eastern salad featuring crisp Romaine lettuce, fresh vegetables, aromatic mint, and crunchy pita chips, all tossed in a tangy lemon-sumac dressing. Perfect as a light lunch or side dish.

Ingredients

Salad Ingredients

  • 1 head Romaine lettuce (chopped into bite-sized pieces)
  • 1 English cucumber (thinly sliced)
  • 1 small red onion (peeled and thinly sliced)
  • 1 cup diced tomatoes
  • 4 radishes (thinly sliced)
  • 1 cup loosely-packed chopped fresh mint leaves
  • 2 to 3 cups pita chips (homemade or store-bought)
  • Ground sumac and freshly-ground black pepper (for garnish)

Dressing Ingredients

  • 1/3 cup extra-virgin olive oil
  • 1/4 cup freshly-squeezed lemon juice
  • 1 large clove garlic (pressed or minced)
  • 1 teaspoon sea salt
  • 1 teaspoon ground sumac
  • Optional: 2-3 teaspoons honey (to sweeten, if desired)

Instructions

  1. Make the lemon dressing: Vigorously whisk together the olive oil, lemon juice, garlic, sea salt, ground sumac, and optional honey in a small bowl or shake in a mason jar for about 30 seconds until well combined. Set the dressing aside to let the flavors meld.
  2. Prepare the salad: In a large mixing bowl, combine the chopped Romaine lettuce, thinly sliced cucumber, red onion, diced tomatoes, sliced radishes, chopped fresh mint leaves, and half of the pita chips. Drizzle the prepared lemon dressing evenly over the salad ingredients and toss gently until everything is well coated and evenly combined.
  3. Serve: Immediately serve the salad, garnished with the remaining pita chips and an extra sprinkle of ground sumac and freshly-ground black pepper for added flavor and crunch.

Notes

  • For best texture, add the remaining pita chips just before serving to maintain their crunch.
  • Homemade pita chips can be made by toasting pita bread slices in the oven until crispy.
  • You can adjust the amount of lemon juice and sumac to taste based on your preference for tanginess.
  • This salad is best enjoyed fresh and does not keep well for long periods once dressed, as the pita chips will become soggy.
