This Easy Rhubarb Syrup recipe creates a vibrant and tangy syrup perfect for enhancing drinks. Made with fresh rhubarb, vanilla bean, cardamom, and a touch of lemon juice, it simmers gently to extract deep flavors. Use it in cocktails, sparkling water, or as a sweet drizzle over desserts. The recipe yields about 16 servings and stores well in the fridge or freezer.

Ingredients

Main Ingredients

  • 10 ounces rhubarb, chopped into 1/2 inch chunks
  • 16 ounces (2 cups) water
  • 200 grams (1 cup) sugar
  • 1/2 of one vanilla bean, split open
  • 1/4 teaspoon ground cardamom
  • Big pinch salt
  • 1 teaspoon fresh lemon juice

Instructions

  1. Combine Ingredients. Add the chopped rhubarb, water, sugar, salt, split vanilla bean, and ground cardamom to a medium saucepan or sauce pot.
  2. Simmer the Mixture. Place the pot over medium-low heat and let it simmer for 15-20 minutes, stirring occasionally. Cook until the rhubarb is completely broken down and the juices have released into the liquid.
  3. Cool and Strain. Remove the pot from the heat and allow the mixture to cool for 10-15 minutes. Then strain the syrup into a bowl by pressing down lightly on the rhubarb solids to extract as much juice as possible. Reserve the leftover chunky mixture, which is ideal as a topping for yogurt or ice cream.
  4. Add Lemon Juice. Stir in 1 teaspoon of fresh lemon juice to the strained syrup to brighten the flavor.
  5. Store the Syrup. Pour the rhubarb syrup into a clean beverage bottle for storage. Glass bottles with swing tops or repurposed glass liquor bottles work well for this. Store the syrup in the refrigerator for up to 3-4 weeks or freeze it for longer preservation.

Notes

  • The leftover rhubarb pulp is delicious when used as a topping for yogurt or ice cream.
  • For best flavor, use fresh, firm rhubarb stalks.
  • Adjust the sugar amount to taste if you prefer a less sweet syrup.
  • Vanilla bean adds a rich depth but can be substituted with vanilla extract if unavailable.
  • Store syrup in sterilized, airtight bottles to prolong freshness.
