This Easy Instant Pot Short Ribs recipe delivers tender, flavorful beef ribs cooked to perfection in under an hour. The short ribs are seasoned, then pressure cooked in a rich, sweet, and savory sauce made from beef broth, molasses, brown sugar, garlic, Worcestershire sauce, onion, and chili peppers, resulting in a melt-in-your-mouth dish perfect for a comforting dinner.

Ingredients

Beef Short Ribs

  • 2-3 lbs Beef short ribs, cut into 3 inch sections
  • Salt & Pepper, to season

Sauce

  • 1 cup Beef broth (Better than Bouillon recommended)
  • 1/4 cup Molasses
  • 1/2 cup Brown sugar
  • 4 cloves Garlic, roughly chopped
  • 1 tbsp Worcestershire sauce
  • 1 small Onion, sliced
  • 2 whole Chili peppers in adobo
  • 1 tbsp Adobo sauce from the chili pepper can

Instructions

  1. Season the short ribs: Pat the short ribs dry and season them generously with salt and pepper on all sides to enhance their flavor.
  2. Prepare the sauce: In the Instant Pot liner, combine beef broth, molasses, brown sugar, roughly chopped garlic, Worcestershire sauce, sliced onion, whole chili peppers in adobo, and the adobo sauce. Stir well until the ingredients are fully combined.
  3. Add the short ribs: Place the seasoned short ribs into the sauce mixture inside the Instant Pot, ensuring they are well coated by the sauce.
  4. Secure the lid: Close the Instant Pot lid securely and place the release knob in the sealing position.
  5. Pressure cook the ribs: Set the Instant Pot to cook on high pressure for 45 minutes, allowing the ribs to become tender and infused with the rich sauce.
  6. Release the pressure: Once cooking is complete, allow for 10-15 minutes of natural pressure release to prevent meat dryness, then carefully quick release any remaining pressure.
  7. Serve: Remove the ribs from the pot and serve immediately with your favorite sides. Spoon a tablespoon of the cooking juices over the meat like an au jus for enhanced flavor.
  8. Freezer meal prep (optional): Place all the raw ingredients into a gallon-size freezer zip bag, label it, and freeze flat for up to 4 months. When ready to cook, thaw overnight in the refrigerator and follow the steps above for cooking.

Notes

  • Using Better than Bouillon or a high-quality beef broth significantly improves the depth of flavor.
  • Be sure to brown the ribs beforehand if you prefer an extra caramelized taste, although this recipe skips that step for simplicity.
  • The natural pressure release helps keep the meat moist and tender, so don’t skip this step.
  • Adjust the number of chili peppers based on your preferred spice level.
  • This recipe is freezer-friendly, making it great for meal prep and busy days.
