Ingredients

Potatoes

  • 4 Potatoes, cut into 1/2" cubes

Seasonings

  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder

Cooking Fats

  • 1 tbsp Butter
  • 1 tbsp Oil

Garnish

  • 1 tbsp Chopped Parsley (fresh or 1/2 tsp dried)

Instructions

  1. Prepare Potatoes: Cut all potatoes into small 1/2" cubes ensuring uniform size for even cooking.
  2. Heat Skillet: Preheat a skillet over medium-high heat and add butter and oil to melt and combine.
  3. Cook Potatoes Initially: Add the cubed potatoes to the hot skillet and toss them to coat evenly in the butter and oil mixture. Sprinkle with salt, black pepper, garlic powder, and onion powder. Cover the skillet to allow the potatoes to lightly steam for 3-4 minutes, helping to soften them.
  4. Uncover and Stir: Remove the lid and stir the potatoes. Continue cooking uncovered, turning them with a spatula frequently to ensure even browning and crispness on all sides.
  5. Achieve Desired Texture: Cook until the potatoes develop a light crispy exterior while remaining soft inside. This usually takes several more minutes of stirring and frying in the skillet.
  6. Finish and Serve: Sprinkle the cooked potatoes with chopped fresh parsley for color and flavor, then serve immediately as a delicious breakfast side.

Notes

  • Use Russet or Yukon Gold potatoes for best texture.
  • You can substitute oil with olive oil for a healthier option.
  • Covering the skillet helps steam and soften the potatoes before crisping.
  • Adjust seasoning to taste, adding more or less salt or spices as preferred.
  • Fresh parsley adds bright flavor, but dried parsley can be used if fresh is unavailable.
