These Easy Baked Beef Tacos are a quick and delicious way to enjoy a classic taco dinner with a crispy twist. Ground beef is seasoned and cooked on the stovetop, then combined with shredded cheese in corn tortillas that are lightly oiled and baked until perfectly crispy and golden brown. Ready in just 30 minutes, this recipe is perfect for a family meal or casual gathering.

Ingredients

Beef Mixture

  • 1 pound ground beef
  • 1 ounce taco seasoning
  • 2/3 cup water

Assembly

  • 2 tablespoons oil
  • 8 corn tortillas
  • 1 1/2 cups shredded cheese

Instructions

  1. Brown the Beef: Using a large skillet over medium heat, add the 1 pound ground beef. Break it into crumbles and cook for about 5 minutes until browned.
  2. Simmer with Seasoning: Drain any excess grease if necessary. Add the 1 ounce taco seasoning and 2/3 cup water. Stir well and reduce heat to low. Let it simmer for another 5 minutes to fully absorb the flavors.
  3. Preheat Oven and Prepare Pan: Preheat your oven to 450°F (232°C). Pour 2 tablespoons of oil onto a large sheet pan.
  4. Warm the Tortillas: Loosely wrap the 8 corn tortillas in a damp paper towel and microwave for 30 seconds. This softens them for folding.
  5. Assemble Tacos: Unwrap the tortillas one at a time and place on the oiled sheet pan. Rub both sides of each tortilla with the oil on the pan. Fill half of each tortilla with the beef mixture, top with shredded cheese, then fold in half.
  6. Arrange on Baking Sheet: Repeat the filling and folding with remaining tortillas, spacing the tacos evenly on the baking sheet to allow hot air to circulate.
  7. Bake and Crisp: Place the sheet pan in the oven and bake for 5-7 minutes. Flip each taco to the opposite side and bake for another 5-7 minutes until both sides are golden and crispy.
  8. Serve Warm: Remove the baked tacos carefully from the oven and serve immediately with your favorite taco toppings such as salsa, sour cream, or guacamole. Enjoy!

Notes

  • Make sure to drain excess grease from the beef to avoid soggy tacos.
  • Warming tortillas before filling makes them more pliable and helps prevent cracking during folding.
  • Flipping the tacos midway through baking ensures even crispiness on both sides.
  • Use a spatula to flip carefully so the tacos do not break apart.
  • Feel free to customize toppings like lettuce, tomatoes, avocado, or hot sauce for added flavor.
