Ingredients

Cookie Butter Brown Sugar Syrup

  • 2 cups brown sugar
  • 1 cup water
  • 1 teaspoon LorAnn Cookie Butter Emulsion

Cookie Butter Cold Foam

  • ½ cup heavy cream
  • 2 teaspoons sugar
  • ½ cup whole milk
  • 2 teaspoons LorAnn Cookie Butter Emulsion

For Assembly

  • 8 ounces cold brew coffee
  • 1 tablespoon cookie butter brown sugar syrup
  • 3 tablespoons Cookie Butter Cold Foam
  • 1 crumbled Biscoff cookie

Instructions

  1. Make the Cookie Butter Brown Sugar Syrup: In a small pan, combine 2 cups of brown sugar and 1 cup of water. Bring the mixture to a boil while stirring continuously. Once boiling, turn off the heat and remove the pan from the stove. Stir in 1 teaspoon of LorAnn Cookie Butter Emulsion. Allow the syrup to cool to room temperature, then store it in an airtight container.
  2. Prepare the Cookie Butter Cold Foam: Place ½ cup heavy cream and 2 teaspoons of sugar in a blender. Blend on slow speed until the cream begins to thicken slightly. Add ½ cup whole milk and blend for another 15 seconds. Finally, add 2 teaspoons of LorAnn Cookie Butter Emulsion and blend for 5 seconds more to combine.
  3. Assemble the Cold Brew: Fill a glass with ice. Add 1 tablespoon of the cookie butter brown sugar syrup followed by 8 ounces of cold brew coffee, leaving about 1½ inches of space at the top. Spoon 3 tablespoons of the prepared cookie butter cold foam on top. Finish by sprinkling crumbled Biscoff cookie over the foam before serving.

Notes

  • The syrup can be stored in the refrigerator in an airtight container for up to 2 weeks.
  • Adjust the sweetness by varying the amount of cookie butter syrup added to the cold brew.
  • Use a high-quality cold brew coffee for the best flavor.
  • The LorAnn Cookie Butter Emulsion provides an intense cookie butter flavor and is key to the recipe's signature taste.
  • For a lighter version, substitute heavy cream with half-and-half or milk when making the foam.
