Ingredients

Cake Ingredients

  • 1 and 3/4 cups (219g) all-purpose flour (spooned & leveled)
  • 3/4 cup (64g) unsweetened natural cocoa powder
  • 1 and 3/4 cups (350g) granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons espresso powder (optional)
  • 1/2 cup (113g/120ml) vegetable oil (or canola oil or melted coconut oil)
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (240ml) buttermilk, at room temperature
  • 1 cup (240ml) freshly brewed strong hot coffee or hot water

Buttercream Frosting Ingredients

  • 1 and 1/4 cups (282g) unsalted butter, softened to room temperature
  • 3 and 1/2 cups (420g) confectioners’ sugar
  • 3/4 cup (64g) unsweetened cocoa powder (natural or Dutch-process)
  • 3–5 Tablespoons (45–75ml) heavy cream (or half-and-half or milk), at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt

Optional Decoration

  • Semi-sweet chocolate chips

Instructions

  1. Preheat and prepare pans: Preheat your oven to 350°F (177°C). Grease two 9-inch cake pans, line them with parchment paper rounds, then grease the parchment paper to ensure an easy release of the cake layers.
  2. Make dry mix: In a large bowl, whisk together all-purpose flour, cocoa powder, granulated sugar, baking soda, baking powder, salt, and espresso powder if using. Set aside.
  3. Mix wet ingredients: Using a handheld or stand mixer fitted with a whisk attachment (or a whisk), combine the vegetable oil, eggs, and vanilla extract on medium-high speed until smooth. Add buttermilk and mix until incorporated.
  4. Combine batter: Pour the dry ingredients into the wet mixture, then add the hot brewed coffee or hot water. Whisk or beat on low speed until fully combined. The batter will be thin.
  5. Bake the cake layers: Evenly divide the batter between the two prepared pans. Bake for 23–26 minutes, or until a toothpick inserted in the center comes out clean. Expect some slight sinking in the center when cooled, which is normal for cocoa-based cakes.
  6. Cool the cakes: Let the cakes cool in their pans set on a cooling rack for 1 hour. Run a knife around the edges to loosen, then remove the cakes from pans, peel off the parchment, and cool completely on the rack.
  7. Make the buttercream frosting: With a handheld or stand mixer fitted with a paddle attachment, beat softened butter on medium speed until creamy, about 2 minutes. Add confectioners’ sugar, cocoa powder, 3 tablespoons of heavy cream, vanilla, and salt. Beat on low speed for 30 seconds, then increase to high and beat for 1 minute. Adjust frosting thickness by adding more confectioners’ sugar or cream as needed. Taste and add more salt if desired, but do not over-whip.
  8. Level the cakes: If the cooled cakes are domed, slice off a thin layer from the tops using a serrated knife to create a flat surface. Discard or crumble the trimmed pieces over the finished cake.
  9. Assemble and frost: Place one cake layer on your serving plate. Spread an even layer of frosting over the top. Place the second cake layer on top and cover the entire cake with the remaining frosting, using an icing spatula and bench scraper for smooth sides. Optionally, garnish with semi-sweet chocolate chips.
  10. Chill before serving: Refrigerate the assembled cake uncovered for at least 30–60 minutes to set the frosting and shape. Serve at room temperature or chilled as preferred.
  11. Store leftovers: Cover leftover cake tightly and store in the refrigerator for up to 5 days. Using a cake carrier is recommended for transport and storage.

Notes

  • The cake batter is thin, which is normal for this recipe.
  • Slight sinking in the center of cooled cakes is expected due to the high moisture and cocoa powder content.
  • Use parchment paper rounds for easy cake removal from pans.
  • Espresso powder is optional but enhances the chocolate flavor.
  • Buttercream frosting consistency can be adjusted with more confectioners’ sugar or heavy cream.
  • Butter should be softened, not melted, for best frosting texture.
  • Allow the cake to chill before slicing to help the frosting set and maintain shape.
  • Store cake in the refrigerator up to 5 days; bring to room temperature before serving for best flavor.
