This classic Chocolate Mousse recipe delivers a rich, creamy dessert with intense bittersweet chocolate flavor. Made with whipped egg whites and cream folded into melted dark chocolate, it’s airy yet indulgent. Perfect for elegant occasions or a special treat, this mousse requires no baking and is ready in about 20 minutes of prep plus chilling time.

Ingredients

Eggs

  • 3 eggs (~55g / 2 oz each)

Chocolate Mixture

  • 125g / 4.5 oz 70% cocoa or bittersweet chocolate, broken into small 1 cm pieces
  • 10g / 0.3 oz unsalted butter

Dairy

  • 1/2 cup full-fat cream

Sugar

  • 3 tbsp caster sugar (superfine white sugar)

For Garnish

  • More whipped cream
  • Chocolate shavings

Instructions

  1. Prepare workspace and ingredients: Ensure eggs are cold for easier separation. Work steadily to keep whipped egg whites and cream cool to maintain volume.
  2. Separate eggs: Carefully separate egg whites into a large clean bowl and yolks into a smaller bowl.
  3. Whisk yolks: Whisk egg yolks until smooth and uniform in texture.
  4. Melt chocolate and butter: Place chopped chocolate and butter in a microwave-safe bowl. Heat in 20-second increments, stirring between bursts until the mixture is smooth and fully melted. Let cool slightly to room temperature but remain pourable (around 35-40°C / 95-104°F).
  5. Whip cream: Beat the full-fat cream until stiff peaks form. Be careful not to overwhip to avoid curdling.
  6. Whip egg whites: Using clean whisk attachments, add the caster sugar to the egg whites and beat until firm peaks form, resembling a floppy elf hat shape. This ensures proper volume and stability.
  7. Fold yolks into cream: Using a rubber spatula, gently fold egg yolks into the whipped cream with up to 8 folds to keep airiness.
  8. Check chocolate temperature: Confirm the melted chocolate has cooled to a runny, room temperature state (ideal 35-40°C). Warm slightly if it has thickened too much.
  9. Combine chocolate and cream-yolk mixture: Pour melted chocolate into the cream and yolk mixture. Fold carefully up to 8 times with a spatula, allowing some streaks.
  10. Fold in egg whites in two parts: Add 1/4 of the whipped egg whites to the chocolate mixture and fold about 10 times to incorporate fully without deflating.
  11. Fold in remaining egg whites: Pour the remaining egg whites into the mixture and fold gently 12 times or until no visible white streaks remain but do not overmix.
  12. Chill mousse: Divide the mousse evenly into 4 small serving glasses or pots. Refrigerate for at least 6 hours or preferably overnight to set fully.
  13. Serve and garnish: Top each mousse with additional whipped cream and chocolate shavings. Optional garnishes include fresh raspberries and a sprig of mint for color and freshness.

Notes

  • Use high-quality 70% cocoa chocolate or bittersweet chocolate for best flavor and texture.
  • Full-fat cream is essential for achieving the characteristic rich mousse texture.
  • Chocolate shavings add a decorative, textural finishing touch to the mousse.
  • Working with cold eggs makes separating yolks and whites easier and cleaner.
  • The ‘floppy elf hat’ peak stage for egg whites means stiff but still pliable peaks—not too dry.
  • Optional flavorings such as coffee or vanilla can be added to the melted chocolate but should be done cautiously to not alter the mousse texture.
