Ingredients

Meat and Vegetables

  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced

Spices

  • 1 Tablespoon ground cumin
  • 2 Tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Canned Goods

  • 15 ounces black beans, drained and rinsed
  • 30 ounces kidney beans (2 cans), drained and rinsed
  • 28 ounces diced tomatoes with juices
  • 10 ounces Rotel (diced tomatoes and green chilies), not drained
  • 28 ounces tomato sauce
  • 15 ounces canned corn, drained

Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, cook the ground beef thoroughly, breaking it into crumbles as it cooks. Drain off any excess grease to reduce fat content. Transfer the browned beef to the slow cooker.
  2. Add Spices and Aromatics: Add the diced onion, minced garlic, ground cumin, chili powder, garlic powder, dried oregano, salt, and black pepper directly to the slow cooker along with the beef. These ingredients will infuse the chili with deep and complex flavors.
  3. Combine Beans and Tomatoes: Stir in the drained black beans, kidney beans, diced tomatoes with their juices, undrained Rotel, tomato sauce, and drained corn. Mix everything thoroughly until well combined to ensure a consistent taste throughout.
  4. Slow Cook the Chili: Cover the slow cooker with its lid and cook on the low setting for 6 to 8 hours, or on high for 3 to 4 hours. This slow cooking process allows the flavors to meld and the chili to thicken beautifully.
  5. Adjust Seasonings: After cooking, give the chili a good stir and taste it. If needed, adjust the seasoning by adding more salt or black pepper according to your preference.
  6. Serve and Garnish: Serve the chili hot. For extra flavor and texture, garnish with toppings such as shredded cheese, sour cream, diced avocado, or sliced jalapenos. Enjoy this comforting and rich chili meal!

Notes

  • For a thicker chili, remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate.
  • You can substitute ground turkey or chicken for a leaner version of this chili.
  • Leftovers store well in the refrigerator for up to 4 days or can be frozen for up to 3 months.
  • Adjust the level of spiciness by using mild or hot Rotel, or adding cayenne pepper if desired.
  • Feel free to add chopped bell peppers or jalapenos at the start for extra texture and heat.
