This Crock Pot Reuben Dip is a creamy, cheesy, and flavorful party appetizer combining classic Reuben sandwich ingredients like corned beef, sauerkraut, and Swiss cheese. Slow-cooked until bubbly and melty, it’s perfect for serving warm with crackers and pickles at gatherings or game days.

Ingredients

Dip Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 1 (12 ounce) package Swiss cheese, shredded and divided
  • 1 (8 ounce) container sour cream
  • 1 cup Frank's Kraut (drained sauerkraut)
  • 12 ounces deli corned beef, sliced thin and chopped

Instructions

  1. Combine Ingredients: In a large mixing bowl, place cream cheese, half of the Swiss cheese, sour cream, drained sauerkraut, and chopped corned beef. Reserve the other half of the Swiss cheese for later use.
  2. Mix Thoroughly: Use an electric mixer to combine all ingredients until smooth and evenly blended, ensuring the cheese is well incorporated.
  3. Prepare Crock Pot: Spray the inside of the crock pot with non-stick cooking spray to prevent sticking. Spread the dip mixture evenly into the bottom of the crock pot.
  4. Cook on Low: Cover the crock pot and cook the dip on low heat for 2 hours, allowing flavors to meld and the mixture to warm through.
  5. Add Topping: After 2 hours, uncover the crock pot and sprinkle the reserved Swiss cheese over the top of the dip. Cover again.
  6. Finish Cooking: Cook for an additional 30 minutes on low to melt the cheese topping and heat the dip completely.
  7. Serve: Serve the dip hot alongside rye crackers, Thousand Island Dressing, and sweet gherkin pickles for a classic Reuben experience.

Notes

  • Make sure to drain the sauerkraut well to avoid a watery dip.
  • Use good quality deli corned beef for the best flavor and texture.
  • This dip can be prepared ahead and kept refrigerated before cooking, then warmed in the crock pot when ready to serve.
  • Substitute Swiss cheese with Gruyere for a nuttier taste if desired.
  • Serve with rye crackers or sturdy bread slices to hold the rich dip well.
