  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp ginger powder
  • 2 tsp chicken seasoning
  • 1 tsp black pepper

Fries

  • 3 large potatoes, cut into fries
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp paprika
  • 2 tbsp cornstarch
  • 1 tsp salt

Mayo Sauce

  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1-2 tbsp hot sauce
  • 1 tsp sugar
  • 1 tsp paprika
  • 1 garlic clove, minced
  • ½ tsp chili flakes

Yogurt Sauce

  • ½ cup yogurt
  • 3 tbsp mayonnaise
  • 1 tsp mixed herbs
  • 2-4 tbsp water
  • Pinch of salt

Cheese Sauce

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1½ cups shredded cheddar cheese
  • Pinch of salt

Instructions

  1. Prepare Sauces: Make the mayo sauce and yogurt sauce by mixing the ingredients for each in separate bowls. Refrigerate both sauces until ready to use.
  2. Season Chicken: Mix the seasoning blend together and divide into 3 equal portions. Season the chicken bites with one portion in a bowl, add the beaten eggs, and toss to coat evenly.
  3. Bread the Chicken: Add one portion of seasoning each to the flour and panko breadcrumbs. Dredge the chicken pieces first in the seasoned flour, then in egg, and finally coat with the seasoned panko crumbs.
  4. Cook the Chicken: Deep fry the coated chicken pieces in hot oil at 350°F until golden brown and cooked through. Drain on a wire rack or paper towels. Alternatively, bake in the oven at 425°F for 20-25 minutes, flipping halfway through.
  5. Prepare the Fries: Toss the cut fries with the garlic powder, onion powder, paprika, cornstarch, and salt until coated. Deep fry in hot oil until golden and crispy. Drain well on a wire rack or paper towels. Alternatively, air fry at 400°F for 18-22 minutes, shaking the basket halfway through.
  6. Make Cheese Sauce: In a pot, melt butter over medium heat. Whisk in the flour and cook for a minute. Gradually add milk while whisking to create a smooth sauce. Stir in shredded cheddar cheese until melted and smooth. Keep warm.
  7. Assemble the Loaded Fries: Spread the fries on a serving tray. Drizzle with the yogurt sauce, mayo sauce, and cheese sauce. Top generously with the crispy chicken pieces. Add more drizzle of the sauces on top and garnish with parsley. Serve immediately.

Notes

  • For a healthier option, bake the chicken and air fry the fries as suggested in the instructions.
  • Adjust hot sauce quantity in the mayo sauce to control spiciness.
  • Ensure oil temperature is maintained when deep frying for best crispiness.
  • Use a wire rack to drain fries and chicken to keep them crispy.
  • Fresh parsley or chopped green onions work well as garnishes.
