Colcannon is a traditional Irish comfort food featuring creamy mashed potatoes mixed with sautéed cabbage and spring onions, enriched with butter, cream, and fresh chives. This recipe delivers perfectly silky mashed potatoes with a flavorful vegetable twist, ideal as a hearty side dish for any meal.

Ingredients

Potatoes and Aromatics

  • 1 kg Potatoes, peeled and cut into large chunks
  • 4 Garlic cloves

Vegetables

  • 300 g Cabbage, finely sliced
  • 100 g Spring onions, finely chopped (including green parts)
  • 20 g Fresh chives, chopped finely

Dairy and Seasonings

  • 200 g Butter
  • 100 ml Single cream
  • Sea salt flakes, to taste
  • Freshly ground black pepper, to taste
  • A pat of butter and extra fresh chives, for garnish

Instructions

  1. Cook the potatoes: Boil the peeled and chunked potatoes together with the whole garlic cloves in salted water for 15-20 minutes, until the potatoes are tender and cooked through.
  2. Sauté the vegetables: While the potatoes cook, melt 100 g of butter in a small frying pan over medium heat. Add the finely sliced cabbage and chopped spring onions and sauté for 3-4 minutes until softened but still vibrant.
  3. Drain and mash: Drain the potatoes and garlic thoroughly, then mash them together, leaving the garlic cloves in the mash to infuse flavor.
  4. Combine vegetables and potatoes: Add the sautéed cabbage and spring onions, along with the butter they were cooked in, directly into the mashed potatoes. Stir gently to combine.
  5. Prepare creamy mixture: Warm the remaining butter and single cream together in the frying pan used for sautéing until the butter melts completely. Pour this warm buttery cream mixture into the potato and vegetable mix and stir well to achieve a smooth, creamy texture.
  6. Final seasoning and serving: Add the finely chopped fresh chives, sea salt flakes, and freshly ground black pepper generously to taste. Stir everything together until well combined. Serve immediately topped with a pat of butter and a sprinkling of fresh chives as garnish.

Notes

  • Leaving the cooked garlic cloves in with the potatoes adds a subtle garlic flavor without overpowering the dish.
  • Use plenty of sea salt and black pepper for seasoning as the dish benefits from robust seasoning.
  • Fresh chives add a bright, oniony freshness that complements the creamy potatoes and cabbage.
  • For a richer texture, ensure the butter and cream mixture is warm when adding to the mash.
  • Colcannon is best served immediately for optimal creaminess but can be gently reheated if necessary.
