This Cinnamon Donut Bread recipe offers a delightful twist on traditional quick bread by incorporating spiced apple cider and a cinnamon-sugar topping, resulting in a moist, flavorful loaf that tastes just like a donut in bread form. Perfect for breakfast, brunch, or an afternoon treat.

Ingredients

Batter Ingredients

  • 1 cup spiced apple cider (~1/2 cup simmered & reduced)
  • 1 stick unsalted butter (room temperature)
  • 3/4 cup light brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/3 cup applesauce (sweetened for a sweeter bread)
  • 1/2 cup vanilla Greek yogurt
  • 1 tsp nutmeg
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 2 cups all-purpose flour
  • 1 ½ tbsp cornstarch
  • 1/4 tsp salt

Topping Ingredients

  • 3 tbsp white sugar
  • 1 ½ tsp ground cinnamon

Instructions

  1. Reduce Apple Cider: Heat a small saucepan over medium heat and simmer the apple cider, stirring constantly for about 8-10 minutes, until it reduces to approximately 1/2 cup. Remove from heat and let cool.
  2. Preheat Oven and Cream Butter & Sugar: Preheat the oven to 350°F (175°C). In a stand mixer, cream together the room temperature unsalted butter and light brown sugar until the mixture is smooth and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time along with the vanilla extract, ensuring the mixture is well combined and smooth.
  4. Incorporate Applesauce and Yogurt: Add the applesauce and vanilla Greek yogurt to the mixture and beat again until all wet ingredients are fully combined and smooth.
  5. Combine Dry Ingredients: In a separate bowl, whisk together the nutmeg, ground cinnamon, baking powder, all-purpose flour, cornstarch, and salt.
  6. Mix Dry and Wet Ingredients: Gradually add the dry ingredients into the wet mixture and beat on low speed until just combined.
  7. Add Reduced Apple Cider: Pour in the cooled reduced apple cider and mix gently until the batter is uniform throughout.
  8. Prepare Pan and Bake: Line a loaf pan with parchment paper and spray it lightly with baking spray. Pour the batter into the pan and bake in the preheated oven for 38-45 minutes, or until the bread has risen and a toothpick inserted into the center comes out clean.
  9. Mix Topping: In a small bowl, combine white sugar and ground cinnamon to create the cinnamon-sugar topping.
  10. Finish and Serve: Once the bread is done, remove it from the oven and immediately sprinkle the cinnamon-sugar mixture on top. Allow it to cool slightly, then slice and enjoy!

Notes

  • The apple cider reduction intensifies flavor; do not skip this step.
  • Use room temperature butter and eggs for optimal mixing and texture.
  • For a dairy-free option, substitute Greek yogurt with a plant-based yogurt.
  • If you prefer a sweeter bread, use sweetened applesauce.
  • Ensure not to overmix the batter once the dry ingredients are added to keep the bread tender.
  • Let the bread cool slightly before slicing to prevent crumbling.
