This Chocolate Baked Protein Oats recipe is a delicious and nutritious single-serving breakfast or snack option. It combines the goodness of oats, protein powder, cocoa, and a hint of sweetness to create a warm, baked treat that's both satisfying and packed with protein. Perfect for a quick meal that supports your fitness goals while indulging your chocolate cravings.

Ingredients

Wet Ingredients

  • 1 large egg (see notes for vegan substitute)
  • 1 tablespoon nut butter (see notes)
  • 2-4 tablespoons milk of choice (I used almond milk)
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract

Dry Ingredients

  • 1/2 cup quick oats
  • 3 tablespoons chocolate protein powder
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt

Optional

  • 1-2 tablespoons chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the oats.
  2. Prepare Ramekin: Spray a 12 to 14-ounce ramekin with oil or non-stick spray and set it aside to prevent sticking.
  3. Whisk Wet Ingredients: In a bowl, whisk together the egg, nut butter, maple syrup or honey, vanilla extract, and start with 2 tablespoons of your chosen milk until smooth.
  4. Add Dry Ingredients: Mix in the quick oats, chocolate protein powder, cocoa powder, baking powder, and salt. You can also fold in any additional mix-ins like berries or nuts at this stage.
  5. Adjust Consistency: If the batter seems too thick or dry, gradually add up to 2 more tablespoons of milk to achieve a batter that’s easy to transfer.
  6. Transfer and Add Chocolate Chips: Pour the batter into the prepared ramekin. Sprinkle the top with chocolate chips if desired for extra chocolatey goodness.
  7. Bake: Place the ramekin in the oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. For a firmer texture, bake a bit longer.
  8. Cool and Serve: Remove from the oven and let it cool for 5-10 minutes. Serve warm, optionally topped with fresh berries or sliced banana for added flavor and nutrients.

Notes

  • For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water) or a commercial egg replacer.
  • You can use any nut butter such as almond, peanut, or cashew butter depending on your preference.
  • Select your favorite milk substitute if dairy-free, like almond, oat, or soy milk.
  • Feel free to add extra mix-ins such as nuts, seeds, or fresh/frozen berries to customize flavor and texture.
  • If you want it sweeter, add a bit more maple syrup or honey, or add more chocolate chips on top.
