This Chipotle Corn Salsa is a flavorful and smoky side dish featuring roasted poblano peppers, sweet corn, fresh shallots, jalapeño, and cilantro, all tossed with tangy lime juice. Perfect for serving with chips, tacos, or grilled dishes, this vibrant salsa balances smoky, spicy, and fresh flavors in every bite.

Ingredients

Peppers

  • 1 Tablespoon olive oil
  • 1 large poblano pepper (or anaheim pepper)

Salsa

  • 1 12-ounce bag frozen corn (defrosted and drained) or 12 ounces fresh corn removed from cob
  • 1 medium shallot, diced
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, finely chopped
  • 2 Tablespoons lime juice
  • 1/2 teaspoon salt, plus additional to taste

Instructions

  1. Roast the Pepper: Preheat your oven to 375°F (190°C). Slice the large poblano pepper in half lengthwise and remove the seeds and membranes. Place the pepper halves skin-side up on a baking sheet, drizzle with olive oil, and sprinkle with a pinch of salt and pepper. Roast in the oven for 30 minutes until the skin is blistered and softened.
  2. Steam and Peel: Transfer the roasted peppers to a plastic bag or a bowl covered with plastic wrap to steam, which loosens the tough outer skin. Once cool enough to handle, peel off the skin using your fingers, discard the skins, and dice the peeled peppers. Place the diced peppers into a large mixing bowl.
  3. Prepare the Salsa: To the bowl with the diced peppers, add the defrosted and drained corn, diced shallot, minced jalapeño, chopped fresh cilantro, lime juice, and 1/2 teaspoon salt. Toss all the ingredients thoroughly to combine and adjust seasoning with additional salt if needed. Serve immediately or refrigerate to let flavors meld.

Notes

  • You can substitute poblano peppers with anaheim peppers for a milder taste.
  • If fresh corn is available, use it instead of frozen for a sweeter, fresher flavor.
  • Roasting and steaming the peppers is key to removing their tough skin and adding a smoky depth of flavor.
  • Adjust jalapeño quantity based on your heat preference.
  • This salsa pairs well with grilled meats, tacos, or as a chip dip.
