A refreshing and flavorful chicken salad featuring tender rotisserie chicken, sweet grapes, crunchy toasted pecans, and crispy croissant croutons, all tossed in a creamy lemon-Dijon dressing. This salad makes a perfect side dish or light meal, ready in just 25 minutes.

Ingredients

For the Croissant Croutons

  • 3 cups chopped croissants (1-inch pieces)

For the Salad

  • 6 cups chopped Romaine lettuce
  • 2 cups cooked shredded rotisserie chicken
  • 1 cup chopped celery
  • 1 cup chopped red grapes
  • 1 cup chopped toasted pecans
  • 1/3 cup chopped red onion
  • 1/4 cup chopped parsley

For the Dressing

  • 1/4 cup olive oil
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon mayonnaise
  • 1 tablespoon red wine vinegar
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Kosher salt and black pepper, to taste

Instructions

  1. Make the croissant croutons: Preheat the oven to 375°F. Spread the chopped croissant pieces evenly on a large baking sheet. Bake for 8 to 10 minutes, stirring once halfway through, until they turn golden brown and crisp. Remove from the oven and let cool.
  2. Make the dressing: In a medium bowl, whisk together olive oil, Greek yogurt, lemon juice, mayonnaise, red wine vinegar, honey, Dijon mustard, and minced garlic. Season with kosher salt and black pepper to taste. Whisk until the dressing is smooth and creamy.
  3. Assemble the salad: In a large bowl, combine the chopped romaine lettuce, shredded chicken, celery, grapes, toasted pecans, red onion, and parsley. Drizzle the dressing over the salad and toss gently to coat all ingredients well.
  4. Serve: Just before serving, top the salad with the croissant croutons to maintain their crunch. Serve immediately for the best texture and flavor.

Notes

  • Use rotisserie chicken for convenience and flavor, but cooked shredded chicken breast works well too.
  • To toast the pecans, spread them on a baking sheet and bake at 350°F for 5–7 minutes until fragrant.
  • For a dairy-free version, substitute Greek yogurt and mayonnaise with vegan alternatives.
  • Serve the croissant croutons on the side if you want to retain their texture longer.
  • Adjust honey and lemon juice to taste for preferred sweetness and tanginess.
