A vibrant and comforting Cauliflower Orange Gnocchi recipe that combines tender gnocchi, caramelized cauliflower, and a zesty orange cream sauce. This quick 30-minute dish features a delightful balance of sweet, savory, and slightly spicy flavors, perfect for a satisfying weeknight meal.

Ingredients

Main Ingredients

  • 1 package gnocchi (I use DeLallo)
  • 2-3 tablespoons unsalted butter
  • a medium-large head of cauliflower, cored and thinly sliced into bite-sized pieces on a mandoline (about 3 cups)
  • 2 shallots, minced (about 1/3 cup)
  • 1/4 – 1/2 cup heavy cream
  • 1/2 – 1 teaspoons red pepper flakes
  • 1 1/2 teaspoons salt (more to taste)
  • juice and zest of 1 orange (about 2 tablespoons of juice, zest to taste)
  • chives for topping

Instructions

  1. Cook the Gnocchi: Prepare the gnocchi according to the package directions, typically boiling until they float to the surface. Once cooked, drain and set aside.
  2. Sauté the Vegetables and Gnocchi: Heat the unsalted butter in a large nonstick skillet over high heat. Add the thinly sliced cauliflower, minced shallots, and the cooked gnocchi. Allow the mixture to sit undisturbed for a few minutes to let the cauliflower and gnocchi brown, then stir. Repeat this process of letting it sit and then stirring to develop a nice caramelization on the vegetables and gnocchi while softening the shallots.
  3. Add Cream and Flavorings: Pour in the heavy cream, orange juice, red pepper flakes, and salt. Stir gently and reduce the heat to simmer for 1-2 minutes, allowing the sauce to thicken slightly and coat all the ingredients in a silky texture.
  4. Finish and Serve: Remove from heat and immediately serve the dish topped with fresh chopped chives and additional orange zest for a burst of fresh, citrusy aroma and flavor. Enjoy warm.

Notes

  • Adjust the amount of heavy cream to achieve your desired sauce consistency; use less for a lighter coating and more for a creamier sauce.
  • The red pepper flakes can be adjusted or omitted depending on your spice preference.
  • Using a mandoline to slice the cauliflower ensures even cooking and a delicate texture.
  • This dish is best served immediately to enjoy the crispy browned texture and fresh citrus flavors.
