Ingredients

Chicken and Seasoning

  • 2 chicken breasts (cut in half lengthwise)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp salt

Sauce and Toppings

  • 1 cup buffalo sauce
  • 1 ½ tbsp Greek yogurt
  • 2 tbsp ranch dressing (for drizzling)
  • 8 taco-sized flour tortillas (warmed)
  • Green onions (for topping)
  • Cilantro (for topping)
  • Blue cheese (for topping)
  • Sliced purple onion (for topping)

Instructions

  1. Season the chicken: Season the chicken breasts on both sides with garlic powder, onion powder, paprika, and salt, pressing the seasoning into the meat to ensure even coverage and flavor infusion.
  2. Cook the chicken: Heat the olive oil in a large cast-iron skillet over medium-high heat. Place the chicken breasts carefully and cook for 4–5 minutes per side until fully cooked and the internal temperature reaches 165°F (74°C). Cook in batches if your skillet can't fit all at once.
  3. Rest and shred: Remove the cooked chicken from the skillet and let it rest for 5 minutes. This allows the juices to redistribute, keeping the meat moist. Then shred the chicken using two forks.
  4. Toss with sauce: In a bowl, whisk together the buffalo sauce and Greek yogurt to create a creamy, tangy coating. Add the shredded chicken to the bowl and toss thoroughly to coat every piece with the sauce mixture.
  5. Assemble the tacos: Warm the flour tortillas to make them pliable. Fill each tortilla generously with the buffalo chicken filling.
  6. Finish and serve: Drizzle the tacos with ranch dressing, then top with chopped green onions, fresh cilantro, crumbled blue cheese, and sliced purple onion for added flavor and crunch. Serve immediately.

Notes

  • Cutting the chicken breasts in half lengthwise helps them cook more evenly and quickly.
  • Allowing the chicken to rest after cooking retains moisture and improves shredding texture.
  • Warming the tortillas before assembling prevents them from cracking and enhances taste.
  • Adjust the buffalo sauce amount to control the spice level to your preference.
  • You can substitute blue cheese with shredded cheddar or omit if preferred.
