Ingredients

Dip Ingredients

  • 8 ounces cream cheese, at room temperature
  • 2 cups cooked shredded chicken
  • 2 cups fresh or frozen corn
  • 3/4 - 1 cup buffalo sauce
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • 1/2 cup ranch dressing
  • 1/3 cup crumbled blue cheese (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper or Colby Jack cheese

To Serve

  • Hard pretzel twists

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (204°C) and lightly butter a 10-inch skillet or baking dish to prevent sticking and add flavor.
  2. Mix the dip ingredients: In a large bowl, combine the cream cheese, shredded cooked chicken, corn, buffalo sauce, chopped cilantro, and green onions. Add the ranch dressing and crumbled blue cheese if using. Season lightly with black pepper and mix everything together until creamy and evenly combined.
  3. Assemble the dip: Spoon the creamy mixture into the prepared skillet or baking dish, smoothing it out evenly. Then sprinkle the shredded cheddar cheese and shredded pepper or Colby Jack cheese evenly on top.
  4. Bake: Place the skillet or baking dish in the preheated oven and bake for about 20 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
  5. Garnish and serve: Once baked, remove from the oven and optionally top with extra fresh herbs like cilantro for added freshness. Serve the warm dip immediately with hard pretzel twists for dipping.

Notes

  • You can substitute buffalo sauce with your preferred wing sauce for different spice levels.
  • Using fresh corn adds a sweeter crunch, but frozen corn works perfectly when fresh isn’t available.
  • For a milder dip, reduce the buffalo sauce quantity or omit the blue cheese.
  • This dip can be prepared a few hours ahead and refrigerated; reheat in the oven before serving.
  • Pair with crunchy veggies or tortilla chips if pretzels aren’t available.
