Crispy and flavorful Buffalo Cauliflower Bites are a perfect vegetarian alternative to traditional buffalo wings. This easy-to-make recipe features cauliflower florets coated in a spicy batter, baked to perfection, and tossed in a tangy buffalo sauce made with hot sauce, butter, and honey. Ideal as a game-day snack or party appetizer, these bites deliver a satisfying kick with a hint of sweetness.

Ingredients

Batter Ingredients

  • 1 medium cauliflower head, cut into florets
  • 1 cup all-purpose flour
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 ¼ cup water, plus up to ¼ cup more as needed

Buffalo Sauce

  • 4 tbsp butter
  • ⅓ cup hot sauce
  • 2-4 tbsp honey (adjust according to preferred sweetness)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper, then lightly spray or brush it with oil to prevent sticking. Set aside. Cut the cauliflower head into bite-sized florets and set aside.
  2. Make the Batter: In a large bowl, whisk together the all-purpose flour, salt, black pepper, cayenne pepper, garlic powder, and paprika until evenly combined. Gradually add 1 ¼ cup water while whisking until a smooth batter forms. If the batter is too thick, add up to an additional ¼ cup water until it reaches a coating consistency.
  3. Coat Cauliflower Florets: Working with a handful of florets at a time, add them to the batter and fold gently until fully coated. Remove each floret individually, allowing excess batter to drip back into the bowl, then transfer to the prepared baking sheet. Arrange them evenly without overcrowding.
  4. Bake the Cauliflower: Place the baking sheet in the preheated oven and bake the battered cauliflower florets for 20-25 minutes, or until they are cooked through and have a light golden color.
  5. Prepare the Buffalo Sauce: While the cauliflower bakes, combine butter, hot sauce, and honey in a small saucepan. Heat over medium-low heat and bring to a gentle simmer, stirring occasionally. Let the sauce simmer for 2-3 minutes until it slightly thickens, then remove from heat.
  6. Toss Cauliflower in Sauce: Once the cauliflower is done baking, transfer the florets to a large bowl. Pour the warm buffalo sauce over the cauliflower and toss thoroughly until each floret is evenly coated.
  7. Serve: Serve immediately with ranch dressing or your favorite dipping sauce for the perfect appetizer or snack.

Notes

  • For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
  • Adjust the amount of cayenne pepper and hot sauce to control the heat level.
  • Honey can be omitted or replaced with maple syrup for a vegan-friendly version, but remove butter and substitute with vegan margarine or oil to keep it vegan.
  • Ensure not to overcrowd florets on the baking sheet for crispier results.
  • Baking time may vary depending on cauliflower size and oven accuracy.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven to maintain crispiness.
