Ingredients

Blueberry Compote

  • 2 cups blueberries (fresh or frozen)
  • 1-2 tbsp maple syrup
  • 1 tbsp lemon juice
  • 1-2 tbsp splash of water (if needed)

Overnight Oats Mixture

  • 2 cups old-fashioned rolled oats
  • 1½ cups milk of choice
  • 1 cup plain Greek yogurt
  • 2 tbsp chia seeds
  • 2 tbsp ground flaxseed
  • 3-4 tbsp maple syrup (adjust to taste)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Make Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, maple syrup, lemon juice, and a splash of water. Cook for 5–7 minutes, stirring occasionally, until the berries break down and release their juices.
  2. Mash for Texture: Lightly mash the cooked blueberries with a fork to create a jammy consistency. Remove from heat and let cool slightly.
  3. Mix Wet Ingredients: In a large bowl, whisk together the milk, Greek yogurt, maple syrup, vanilla extract, and a pinch of salt until smooth and well combined.
  4. Add Dry Ingredients: Stir in the rolled oats, chia seeds, and ground flaxseed into the wet mixture until everything is thoroughly incorporated.
  5. Combine with Blueberry Compote: Gently fold the cooled blueberry compote into the oat mixture, ensuring an even distribution of flavor and fruit.
  6. Refrigerate Overnight: Divide the mixture into 4 jars or containers, cover them, and refrigerate for at least 4 hours or preferably overnight to allow the oats and seeds to absorb the liquids and soften properly.
  7. Serve: Before enjoying, stir the oats well. If the mixture is too thick, add a splash of milk to reach your desired creamy consistency.

Notes

  • Use any milk variety you prefer, such as almond, soy, cow’s milk, or oat milk.
  • Maple syrup quantity can be adjusted to taste or substituted with honey or agave syrup.
  • Blueberries can be fresh or frozen; frozen berries may require a slightly longer cooking time.
  • For a vegan version, replace Greek yogurt with plant-based yogurt.
  • Overnight oats can be stored in the refrigerator for up to 3 days.
  • Add nuts or seeds on top before serving for extra crunch.
