Ingredients

Sauce and Base Ingredients

  • 400g/14fl oz full fat coconut milk
  • 40g/1.4 oz red curry paste
  • 3 tablespoons/45 ml/1.6 fl oz fish sauce
  • 1.5 tablespoons sugar
  • 3 garlic cloves, crushed
  • 2 teaspoons minced ginger
  • 2 teaspoons rice vinegar

Vegetables and Dumplings

  • 1 head broccoli (around 300g/10.6 oz), cut into florets
  • 375g/13 oz frozen dumplings (or as many as can fit in your casserole or baking dish)

Garnishes

  • Green onions, chopped
  • Coriander leaves
  • Toasted sesame seeds
  • Chilli oil or chilli crisp oil

Instructions

  1. Mix the Sauce: Preheat your oven to 170°C/340°F fan forced or 190°C/374°F conventional. Prepare a large casserole dish (around 3.5L or 3.6 quart). In the dish, whisk together the coconut milk, red curry paste, fish sauce, sugar, crushed garlic, minced ginger, and rice vinegar using a silicone-covered whisk to avoid scratching, or mix all ingredients in a jug and pour over later. Taste and adjust seasoning with extra sugar, fish sauce, or vinegar if needed.
  2. Assemble and Bake: Add the broccoli florets into the prepared sauce in the casserole dish. Arrange the frozen dumplings evenly around the broccoli. Spoon some sauce over the dumplings and broccoli to coat. Cover the dish with its lid or foil and bake in the preheated oven for 25 minutes. Remove the cover and continue baking for an additional 10 minutes to allow the dumplings to brown slightly and the sauce to thicken.
  3. Garnish and Serve: Once baked, remove the casserole from the oven. Garnish with chopped green onions, coriander leaves, toasted sesame seeds, and drizzle with chili crisp oil or chili oil for an extra kick. Serve hot for a delicious and easy meal.

Notes

  • Use full fat coconut milk for the best creamy texture and flavor.
  • Adjust the sweetness, saltiness, and acidity by balancing sugar, fish sauce, and vinegar to your preference.
  • Frozzen dumplings can vary in size; ensure they fit comfortably in your baking dish for even cooking.
  • You can substitute broccoli with other firm vegetables like cauliflower or snap peas.
  • Covering tightly during the first bake keeps the dumplings moist; removing the lid at the end crisps them slightly.
  • If you like it spicier, add extra red curry paste or more chili oil in the garnish.
