Delicious and easy Asian Chicken Lettuce Wraps bursting with savory and slightly sweet flavors, perfect for a quick and healthy meal. Ground chicken is cooked with fresh vegetables and coated in a flavorful homemade sauce, then served crisp in fresh lettuce leaves for a refreshing and satisfying dish that beats restaurant versions like P.F. Chang's.

Ingredients

Protein & Vegetables

  • 1 pound ground chicken
  • ½ onion, finely diced
  • ½ cup red or green pepper, finely diced
  • 8 ounces water chestnuts, drained and finely diced

Oils & Sauces

  • 2 Tablespoons peanut oil
  • 3 Tablespoons soy sauce
  • 3 Tablespoons hoisin sauce
  • 1 Tablespoon sesame oil
  • 1 Tablespoon rice vinegar
  • 2 teaspoons sweet chili sauce

Others

  • ½ Tablespoon minced garlic
  • 1 Tablespoon peanut butter
  • 1 Tablespoon honey
  • ½ teaspoon garlic powder
  • ¼ teaspoon powdered ginger
  • ¼ cup peanuts, crushed
  • ¼ cup sliced green onions
  • Lettuce leaves or your favorite Asian salad for serving

Instructions

  1. Prepare the sauce: Whisk together soy sauce, hoisin sauce, sesame oil, rice vinegar, peanut butter, honey, sweet chili sauce, garlic powder, and powdered ginger in a bowl until smooth. If the peanut butter is too firm, microwave the mixture for 30 to 60 seconds to melt it and ensure thorough mixing.
  2. Cook the chicken mixture: Heat 2 tablespoons of peanut oil in a frying pan over medium-high heat. Once hot, add ground chicken, finely diced onion, and minced garlic. Cook, stirring frequently, until the chicken is browned and the onions become translucent, about 5 to 10 minutes.
  3. Add vegetables: Stir in the finely diced peppers and water chestnuts. Continue cooking for around 5 minutes, until the peppers soften slightly but retain some crunch.
  4. Combine with sauce: Pour the prepared sauce over the chicken and vegetable mixture. Reduce heat to low and simmer, stirring occasionally, until everything is evenly coated and heated through, about 2 to 3 minutes.
  5. Serve: Spoon the savory chicken mixture into fresh lettuce leaves or serve atop an Asian salad, or alternatively over noodles or steamed rice. Garnish with crushed peanuts and sliced green onions for added texture and flavor.

Notes

  • You can substitute ground chicken with ground turkey or pork for variation.
  • Adjust the amount of sweet chili sauce according to your preferred spice level.
  • For a gluten-free version, use tamari instead of soy sauce and ensure hoisin sauce is gluten-free.
  • If you prefer a crunchier texture, add chopped water chestnuts last just before serving.
  • These wraps make excellent appetizers or a light main dish.
