Ingredients

Main Ingredients

  • 2 1/4 cups old fashioned oats
  • 1 3/4 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 3/4 cups unsweetened vanilla almond milk (or milk of your choice)
  • 1/2 cup unsweetened applesauce
  • 1/3 cup pure maple syrup (can use brown sugar or honey)
  • 2 tablespoons melted butter or coconut oil (slightly cooled)
  • 2 large eggs (beaten)
  • 2 teaspoons pure vanilla extract

Add-Ins

  • 1 cup diced apples (Honeycrisp recommended)

Optional Toppings

  • Whipped cream
  • Yogurt
  • Nut butter
  • Drizzle of maple syrup or honey
  • Sprinkle of brown sugar
  • Dash of cinnamon
  • Splash of milk
  • Apple slices
  • Dried cranberries

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish with nonstick cooking spray and set it aside to ensure the oatmeal doesn't stick.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the old fashioned oats, ground cinnamon, baking powder, and salt. Stir these together so the spices and leavening are evenly distributed throughout the oats.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk together the unsweetened vanilla almond milk, unsweetened applesauce, pure maple syrup, melted butter or coconut oil, beaten eggs, and pure vanilla extract until smooth and fully incorporated.
  4. Combine Wet and Dry Mixtures: Pour the wet mixture into the large bowl containing the dry ingredients. Stir everything well until all the oats are evenly coated. Then fold in the diced apples gently so they are spread throughout the mixture.
  5. Bake the Oatmeal: Transfer the combined oatmeal mixture into the prepared baking dish, spreading it evenly. Place it in the preheated oven and bake for 30 to 40 minutes, or until the oatmeal is set, slightly golden on top, and a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Remove the baked oatmeal from the oven and allow it to cool for a few minutes before serving. Top with your choice of optional toppings such as whipped cream, yogurt, nut butter, or a drizzle of maple syrup for extra flavor and texture.

Notes

  • You can substitute the almond milk for any milk of your choice, including dairy or other plant-based options.
  • Using slightly tart apples like Honeycrisp adds a nice balance to the sweetness; feel free to use other apple varieties.
  • For a vegan version, replace eggs with flax eggs and use a plant-based butter substitute.
  • Customize sweetness by adjusting the maple syrup quantity or adding brown sugar on top.
  • This oatmeal reheats well and can be stored in the refrigerator for up to 5 days.
  • Optional toppings add extra texture and flavor - experiment with what you love!
