These Apple Breakfast Cookies are a wholesome and delicious morning treat packed with oats, fresh grated apple, and toasted walnuts. Naturally sweetened with maple syrup and applesauce, they provide a soft texture with warm spices like cinnamon, cloves, and nutmeg. Perfect for a quick, nutritious breakfast or snack.

Ingredients

Wet Ingredients

  • 1/4 cup creamy almond butter
  • 1/4 cup unsweetened applesauce
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 1 cup oat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 cup old fashioned oats

Add-ins

  • 1 cup grated apple (Honeycrisp or Granny Smith recommended)
  • 1/3 cup toasted chopped walnuts
  • 1/4 cup raisins

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 350 degrees F (175 degrees C). Line a large baking sheet with parchment paper to prevent sticking and set aside.
  2. Mix wet ingredients: In a large mixing bowl, combine the creamy almond butter, unsweetened applesauce, pure maple syrup, large egg, and vanilla extract. Whisk the mixture thoroughly until it becomes smooth and well-blended.
  3. Add dry ingredients: To the wet mixture, add oat flour, baking soda, kosher salt, ground cinnamon, ground cloves, and ground nutmeg. Stir gently until just combined to avoid overmixing.
  4. Incorporate oats, apple, and nuts: Fold in the old fashioned oats, grated apple, toasted chopped walnuts, and raisins, ensuring these ingredients are evenly distributed throughout the dough.
  5. Scoop dough onto baking sheet: Using about 2 tablespoons of dough per cookie, drop the mixture onto the prepared baking sheet. Space them adequately to allow for slight spreading during baking.
  6. Bake the cookies: Place the baking sheet in the preheated oven and bake the cookies for 10 to 12 minutes. They should be set around the edges but remain soft in the center.
  7. Cool the cookies: Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 5 minutes before transferring them to a wire cooling rack to cool completely.

Notes

  • Oat flour can be made by grinding rolled oats in a blender or food processor until fine.
  • For variety, swap walnuts with pecans or almonds.
  • Use a tart apple like Granny Smith for a nice balance against the sweetness.
  • Store the cookies in an airtight container at room temperature for up to 3 days or freeze for longer storage.
  • These cookies are naturally gluten free if certified gluten free oats and oat flour are used.
