Delicious and easy-to-make fruit oat and pretzel bars featuring a crunchy pretzel crust, a sweet jam layer, and fresh berries. These bars combine the perfect balance of salty and sweet flavors with a satisfying oat crumble topping, suitable for snacks or dessert.

Ingredients

Dry Ingredients

  • 4 cups salted mini pretzels
  • 1 1/2 cups old fashioned oats
  • 1/2 cup all-purpose or whole wheat flour
  • 1/4 - 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 2 sticks salted butter, at room temperature
  • 2 teaspoons vanilla extract

Fruit Fillings

  • 10-12 ounces jam (strawberry, blackberry, or blueberry)
  • 1/2 cup fresh berries (chopped strawberries, raspberries, etc.)

Instructions

  1. Prepare the baking dish and oven: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper to prevent sticking and make removal easier.
  2. Process pretzels and mix dry ingredients: Using a food processor or blender, grind the salted mini pretzels into a fine powder or flour. Measure out 1 cup of this pretzel flour and transfer it to a large mixing bowl. Add the old fashioned oats, all-purpose or whole wheat flour, brown sugar (between 1/4 to 1/2 cup as preferred for sweetness), baking powder, and salt. Stir gently to combine all dry ingredients evenly.
  3. Add butter and vanilla: Add the softened salted butter and vanilla extract to the dry mixture. Use a hand mixer or spoon to beat and combine the butter into the dry ingredients until a crumbly dough forms, ensuring an even mixture without large clumps.
  4. Assemble the bars: Take about one-third of the dough mixture and press it firmly into the bottom of the prepared baking dish to form the base layer. Carefully spread the jam evenly over this dough base, making sure it covers well. Next, sprinkle the chopped fresh berries on top of the jam layer for added flavor and texture. Finally, crumble the remaining dough evenly over the jam and berries, creating a topping.
  5. Bake the bars: Place the assembled baking dish into the preheated oven and bake for 30 to 40 minutes, or until the crumble topping turns golden brown and the jam is bubbling slightly.
  6. Cool and serve: Remove the baking dish from the oven and allow the bars to cool completely inside the pan. Once cooled, lift the parchment paper to remove the bars and cut into 24 servings. Store the bars in a sealed container at room temperature for up to one week for optimal freshness.
