These Almond Flour Tortillas are a delicious, gluten-free and vegan alternative to traditional wheat tortillas. Made with simple, wholesome ingredients like almond flour and psyllium husks, they offer a soft, pliable texture perfect for wraps, tacos, or burritos. Quick to prepare and cook in just 35 minutes, they’re ideal for those seeking a healthy, grain-free option without sacrificing flavor or convenience.

Ingredients

Almond Flour Tortillas

  • 1 1/2 cups blanched almond flour
  • 1 tablespoon whole psyllium husks
  • 1/2 cup warm water
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt

Instructions

  1. Combine Ingredients: In a bowl, mix together the almond flour, whole psyllium husks, and salt. Gradually add the warm water and apple cider vinegar, stirring first with a spoon and then kneading with your hands until a cohesive dough forms.
  2. Shape Dough & Let Rest: Shape the dough into a ball and allow it to rest for at least 10 minutes. This resting period is crucial as it lets the psyllium husks hydrate fully, helping the dough hold together better.
  3. Divide Dough: Portion the dough into 6 to 8 equal pieces, depending on whether you want larger or smaller tortillas.
  4. Roll Out Dough: Take each piece and roll it between two sheets of parchment paper into a roughly 1/8-inch thick circle. Avoid rolling too thinly to prevent tearing. Gently peel off the top parchment paper.
  5. Cook Tortillas: Heat a large nonstick skillet over medium heat and lightly grease with olive oil or cooking spray if desired. Place the rolled dough into the skillet and cook for 2 to 3 minutes until the underside is lightly golden brown. Flip and cook for an additional 1 to 2 minutes on the other side.
  6. Wrap Tortillas in Towel: Remove cooked tortillas from the skillet and immediately wrap them in a clean kitchen towel to retain moisture and prevent drying while cooking the remaining tortillas.
  7. Serve & Enjoy: Serve the tortillas warm as bases for your favorite fillings or dishes and enjoy the gluten-free, vegan goodness.

Notes

  • Resting the dough is essential for proper hydration of psyllium husks, which provides flexibility to the tortillas.
  • Use parchment paper to roll out the dough to prevent sticking and ensure easy transfer to the skillet.
  • Do not roll the dough too thin to avoid tearing during cooking.
  • These tortillas are best enjoyed fresh but can be stored wrapped in a towel inside an airtight container for up to 2 days.
  • Reheat gently in a skillet or microwave before serving.
  • For oil-free cooking, omit greasing the skillet and rely on a high-quality nonstick pan.
