  • 1 1/2 tbsp capers, drained and finely chopped
  • 1 1/2 tbsp gherkin or cornichon, finely chopped
  • 1 1/2 tbsp eschallot or onion, finely chopped
  • 1/4 cup dill leaves, finely chopped
  • 1 dash Worcestershire sauce
  • 4 or so dashes Tabasco sauce
  • 1 tbsp lemon juice (adjust to taste)

Instructions

  1. Combine Ingredients for All Sauces Except Thai Sauce: Gather all the listed ingredients for each sauce (excluding the Thai sauce). Place them in separate mixing bowls and stir or whisk thoroughly until all ingredients are well combined and the texture is smooth and uniform.
  2. Season to Taste: Taste each sauce and adjust the salt and pepper according to your preference to achieve the perfect balance of flavors.
  3. Prepare Thai Sweet Chilli Lime Sauce: In a bowl, combine all ingredients except for the chopped coriander leaves. Whisk the mixture well until fully emulsified. Then, gently stir in the coriander. Add salt and pepper to your liking.
  4. Rest the Thai Sauce: Let the Thai sauce rest for about 20 minutes at room temperature. This allows the flavors to meld beautifully, ensuring a vibrant and fresh taste.
  5. Serve: Transfer all sauces to serving bowls and offer them alongside freshly cooked prawns for dipping. Enjoy immediately or refrigerate and use within a day for the best freshness.

Notes

  • You can adjust the salt to taste after mixing each sauce to suit your preferences.
  • For the horseradish sauce, fresh horseradish can be substituted with jarred horseradish if unavailable.
  • The Thai sauce benefits from resting to let the flavors blend well before serving.
  • Store any leftover sauces in airtight containers in the refrigerator and consume within 2 days.
  • Feel free to tweak the level of spice in the sauces by varying the amount of Tabasco or cayenne pepper used.
