This 10-Minute Cinnamon Roll Oatmeal is a warm, comforting vegan breakfast that perfectly captures the sweet and spicy flavors of a cinnamon roll. Made with gluten-free rolled oats, chia seeds, almond milk, and a drizzle of cinnamon butter, it’s creamy, flavorful, and easy to prepare. Perfect for a quick and nourishing start to your day.

Ingredients

Oatmeal Base

  • 1 cup gluten-free rolled oats
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 2 ¼ cups almond milk (plus splashes more if needed)
  • 2 tbsp maple syrup
  • ¼ tsp vanilla extract
  • Pinch of salt

Mix-ins and Topping

  • ¼ cup vegan cream cheese or coconut yogurt
  • 2 tbsp vegan butter
  • ½ tsp cinnamon

Instructions

  1. Combine Ingredients: In a saucepan, combine the gluten-free rolled oats, chia seeds, and 1 teaspoon cinnamon. Stir them together to evenly distribute the spices and seeds for an even flavor throughout the oatmeal.
  2. Add Liquids and Heat: Pour in the almond milk, maple syrup, and vanilla extract. Place the saucepan over medium-high heat and bring the mixture to a boil, stirring occasionally to prevent sticking.
  3. Simmer the Oatmeal: Once boiling, reduce the heat to a simmer. Cook the oatmeal for about 5 minutes or until it thickens to your preferred consistency. Add splashes of almond milk if you want a thinner texture.
  4. Incorporate Creaminess: After the oatmeal has thickened, stir in the vegan cream cheese or coconut yogurt to add a creamy texture and rich flavor. Remove the saucepan from the heat and set aside.
  5. Prepare Cinnamon Butter: In a small skillet, melt the vegan butter over medium heat. Once melted, remove from heat and stir in ½ teaspoon of cinnamon to create a fragrant cinnamon butter.
  6. Serve and Garnish: Scoop the creamy oatmeal into bowls and drizzle the cinnamon butter over the top. Alternatively, you can swirl the cinnamon butter directly into the saucepan of oatmeal before serving for a marbled effect.

Notes

  • Use gluten-free oats and almond milk to keep this recipe vegan and gluten-free.
  • If you prefer a thinner oatmeal, add extra almond milk during cooking.
  • Vegan cream cheese can be substituted with coconut yogurt for a lighter option.
  • Adjust the sweetness by adding more or less maple syrup to taste.
  • This recipe serves 3 but can be easily doubled or halved.
